Vegan mock chicken with noddles and veggies

This recipe contains garlic and onion
Ingredients:

200g noodles

5 tbsp oil
150g mock chicken
salt and freshly ground black pepper
1 medium onion, diced
1 1/2 tsp minced garlic (about 2 cloves)
1 1/2 tsp minced fresh ginger
1 tsp curry powder
1 tsp paprika
2 tsp vegan "fish" sauce or 1 tsp soy sauce, 1 tsp miso and some seaweed flakes
250 g baby bok choy (paksoi), cut lengthwise into large strips
1/4 cup/0.6 dl peeled, finely slivered carrot
1/2 cup/1.2 dl chopped cilantro
2-4 lemon wedges, for serving.

 

Method:

1. Cook the noodles until barely tender and drain. Season the mock chicken with pepper (it's probably salted already). Sauté the onion, garlic and ginger in two tablespoons of oil until lightly browned, about two minutes.

2. Add the mock chicken, powdered spices, vegan fish sauce and two tablespoons of water. Reduce the heat, cover and simmer for five minutes. Remove from heat, but keep warm.

3. Heat three tablespoons of oil and sauté the bok choy until wilted, 3-5 minutes. Add the carrots and noodles and sauté for 2-3 minutes more. Add some salt and pepper to taste.

4. Divide noodles between two plates and place the mock chicken mixture on top of it. Top with a lot of chopped cilantro and garnish with lemon wedges. Makes two portions.
